
This cake has been in my freezer for a year. Why? Because it is tradition.
Couples everywhere take up valuable freezer space by saving the top tier of their wedding cake for their one year anniversary. Where did this tradition come from and do people really eat their old frozen cake? Mine ended up in the trash, so I sought out to find the answers.
Here is what I found:
- We saved the top layer of our cake because it’s a tradition (no explanation, it’s just tradition)
- It’s suppose to bring good luck and children to your marriage
- Save it for the sentiment of recreating a piece of our wedding day
- Keep it to celebrate the Christening of your first child
Properly Preserving your cake (what I should have done):
- Have a guest or family member take the top layer of your cake as soon as possible and freeze to harden the icing
- After about 2 hours, they should remove the cake and wrap it with several layers of plastic wrap
- Place the cake back in the box and wrap the box with several layers of plastic wrap, then freeze the box
- Remove the box on your first anniversary. Allow it to thaw in the refrigerator for 48 hours and then another 2 to 3 hours at room temperature.
Alternate anniversary ideas:
- Have your wedding bakery make you a fresh, personal size cake in the same flavor as your wedding cake. Many will offer this anniversary cake at no charge if you inquire when you order your wedding cake.

I saved one of the cupcakes from our reception. I froze it for a couple hours, wrapped it up in a couple layers (can’t remember if there is plastic wrap in there, but I know there’s foil) and stuck it in a cupcake saver I bought at Williams-Sonoma. We’ve still got a couple more months until we get to take it out, but I hope it’s still good! The only bite of cake I got was when Adam shoved the cupcake in my face.

a friend of mine just recently did this and the cake tasted like it was made yesterday! she said her aunt wrapped it in so much plastic wrap that it took her 15 min to open it, but i had some and it tasted fresh and moist.

I’ve heard from probably 20 different couples that their cake was still just as delicious! Everyone has been amazed that the cake was still soft and moist and delicious. I think this is definitely a tradition worth observing. I can’t wait to eat mine on my one year anniversary!
